In the top segment, (white) veal is highly appreciated due to its distinctive flavour, colour and tenderness. It is a luxury product that is young and tender, easily digestible and has a low fat content. Every day, veal slaughterhouse Vitelco needs white veal calves to provide this high-quality veal to its buyers. Because Vitelco is part of PALI Group these calves partially originate from own veal farms. Naturally, chain management is applied.

Every individual calf used at a PALI Group veal farm has been pre-assessed by one of our purchasing specialists.

Every individual calf used at a PALI Group veal farm has been pre-assessed by one of our purchasing specialists. This assessment takes place on the basis of standard selection criteria, among other things, pertaining to the aspects: general health, age, meat level, sex and weight. The specially selected calves are housed in groups by the veal farmer which promotes their natural herd instincts. A meticulous nutrition programme and checked, individual care contribute to optimum growth conditions for the calves.

Extensive slaughter information can be found on calves slaughter at Vitelco on PALI Data (www.palidata.net).

The dissemination of information and communication is important between the links in the production chain. Failure costs can be limited and business operations can be optimised by using the information available from other links in the chain. Vitelco suppliers (veal farmers and calf traders) are provided with information on classification, weight, but also on the results of the carcass and organ inspections carried out at the slaughterhouses by the nVWA on PALI Data (www.palidata.net).
